TERROIR
–
The contrasting topography of the landscape as we see it today – hills, valleys, plateaus, highlands – is the result of climatic and tectonic changes over the last two hundred million years. Seas came and went, tropical climate gave way to much colder weather. These variations left their signature in the sedimentary deposits. Today, the AOC Ventoux wines benefit from a Mediterranean climate. Temperatures are mild, very conducive to the vines. The intense sunshine concentrates the sugars, enhances the colour, the tannins and the acidity in the grape.

And the Mistral wind is one of the most influential parts of the overall picture. It is an essential feature of the Comtadin scene, sweeping away damaging humidity and drying the vines. Farmers must also protect their crops with hedges of cypress or poplar, running east-west in the plain. The protective, massive presence of Mont Ventoux itself forms a barrier to wind, attenuating its force. Sun and mistral form powerful allies that produce wines of character.

GRAPE VARIETY
–
Cinsault provides a certain elegance and a moderate degree of alcohol.

|
Used only slightly in the AOC Ventoux appellation, Cinsault is sought for the balance it brings to rosé wines, its freshness and aromatic finesse.

TASTING
–
Seeing, smelling, tasting.
Balance of savours based on the elementary sensations: acidity, mellowness, tannins. The right words to approach the input from both smell and taste, to give one’s own personal impressions on the level of quality of the wine, its perspectives for aging and improving. The perception of wine is expressed through the richness of the sensations and emotions felt when tasting it. Wine reflects its terroir, the culture and the atmosphere that produces it.
