TERROIR
– The word «safre» is a local Comtadin term, describing a more or less compact sandstone-sandy-loam sedimentation formation from the Miocene (tertiary era). Safres are fairly present in the Comtat Venaissin (the Carpentras basin). This material, which is relatively soft, has been used by man since time immemorial, in caves and rock dwellings. Altered safre, which has a light, sandy texture combined with pebbles, is a very typical terroir in the Côtes du Ventoux appellation.

GRAPE VARIETY
– The Carignan grape, of Spanish origin, is adapted to poor, hot soils. It is very present in the Côtes du Ventoux appellation. The Carignan grape is cultivated to produce low yields, and provides excellent qualities of colour, robustness, power and liveliness to the blend.

Some terms characterise young wines, others provide information on how the wine is going to evolve. The vocabulary used to express these sensations can include information on the cellar’s winemaking practices, the soil, the percentage of the different varietals in the blend, the year. The aromatic richness of the wine plays an important role in matching foods and wines. |
